  1. In a large mixing bowl, beat the eggs and the sugar together. Add the oil. Mix in the matzo meal and the cocoa.
  2. Add nuts or, if preferred, reserve nuts for topping. Pour batter into a greased 23 x 33cm baking tin. Bake at 160 degrees C (gas mark 3) for about 30 minutes and check. The secret to a moist brownie cake is to underbake it! Return to the oven for an additional 5 minutes if necessary.

Something else.Perfect - a really straightforward recipe that produces a delicious cake. I have made it twice now and added 2 T of a chunky homemade marmalade for even more flavour (I also reduce the sugar slightly to due to the extra sweetness of the jam). I like to slice it in half and spread it with whipped cream that has had 100g of melted dark chocolate whipped into it. I then ice it with a dark drizzly chocolate icing. You could also spoon a little Grand Marnier onto the bottom layer before you put the cream on. This was my solution to a request for a Chocolate/Orange birthday cake!-18 Jul 2008


  • 4 tablespoons unsalted butter (cut into chunks, plus extra for the pan)
  • 3 ounces dark chocolate (or bittersweet chocolate, broken into squares or coarsely chopped)
  • 1 cup almond flour (or almond meal)
  • 1/2 cup sugar
  • 1/4 cup cocoa powder
  • 2 tablespoons tapioca starch (or potato starch)
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • Optional: 1/4 cup dark chocolate chips (or chopped chocolate)

Preheat the oven to 350 F. Line an 8x8x2-inch baking dish with parchment paper or foil. Butter the paper or foil. Set aside.

In the top of a double boiler, or in a heatproof bowl set over a saucepan of gently simmering water, place the butter and chocolate. Stir frequently until the chocolate and butter are completely melted and smooth. Remove from the heat.

In a large mixing bowl, whisk together the almond flour, sugar, cocoa powder, and tapioca starch.

Add the dry ingredients to the melted chocolate mixture, and mix well to form a lump-free batter.

Add the eggs and vanilla, and beat into the brownie batter. Fold in the chocolate chips if using.

Pour the brownie batter into the prepared pan, using a spatula to smooth the top.

Bake in the preheated oven for 25 to 30 minutes, or until the brownies are firm to the touch, and a tester inserted in the center of the pan comes out clean.

Cool the brownies in their pan on a wire rack.

When you are ready to serve them, invert the pan over a serving plate, remove the paper or foil, and turn right side up. Cut into squares and serve.

The Ultimate Passover Brownie Recipe

Kosher-for-Passover baked goods—which in accordance with the holiday, can’t be made with leavened wheat, barley, rye, spelt, or oats—often get a bad rap. Sometimes, it’s deserved: The worst offenders are pasty, dry, under-seasoned, or some unappetizing combination of the above (which, amazingly, is possible).

But it was never this way in my house, mercifully, thanks to my mother’s Passover brownies. Exactly when she started making them is unclear — they’ve been a holiday staple for that long — but family lore has it that she spied the recipe in the pages of a Jewish Community Center calendar more than two decades ago. Her adapted version is everything a brownie should be: dense, intensely chocolatey, and most importantly, very unlike those chalky Passover desserts that wind up secreted in napkins every year.

In place of regular wheat-based flour, the recipe calls for matzo cake meal. It’s similar to matzo meal, except that it’s ground more finely—this gives the final product a smoother, more brownie-like texture. Also key: the chocolate chips scattered throughout, which when baked, become pockets of gooey, rich decadence.

These brownies are so good, you might eat them year-round.

Makes about 15 brownies

4 eggs
2 cups sugar
3/4 cup cocoa
1/2 cup water
1/2 cup matzo cake meal
1/2 cup vegetable oil
1 tsp. salt
1/2 cup chopped walnuts
3/4 cup semi-sweet chocolate chips

Preheat oven to 350 degrees, and grease 9-inch-square baking pan.

In a large bowl, beat eggs. Add sugar, cocoa, and water and mix well. Add cake meal, oil, and salt and mix well. Fold in nuts and chocolate chips. Spread the mixture into the greased pan.

I’m not an expert on Jewish cuisine, but I do have a very good recipe for Passover brownies. They can easily be made parve if you pick a non-dairy chocolate, and they are made with matzo cake meal instead of flour.

Where I live, matzo cake meal is pretty easy to find the month before Passover begins. However, if you can’t find it you can substitute 85 grams of matzo meal for your Passover brownies. Cake meal will give you a smoother texture, though. In fact, I like the texture so much that I plan on making these all-year round. They are really good, and it will be fun telling people about the secret ingredient.

Here’s a picture of what they look like after being chilled and pulled out of the 8 inch square metal pan.

And here’s a brownie! I put the serving size as 12, but your could easily get 16 small-ish or 9 jumbo size or 18 wedges.

Update: I liked these Passover brownies so much I made another non-Passover batch using 85 grams of all-purpose flour. It worked! So not only can you make these as a Passover dessert, you can make them as a good oil-based or non-dairy brownie.

Passover Brownies

Ingredients US Metric

  • 3/4 cup matzo flour or matzo meal*
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract or seeds from 1/4 vanilla bean
  • 5 ounces bittersweet chocolate
  • 5 tablespoons (2 1/2 oz) unsalted butter, plus more for the pan
  • 2 large eggs
  • 1/4 cup brandy or chocolate liqueur
  • 1/4 to 1/2 cup roughly chopped walnuts
  • 1/4 to 1/2 cup semisweet or bittersweet chocolate chips or chopped chocolate (optional)

Directions

Preheat the oven to 350°F (170°C). Butter an 8- or 9-inch square baking pan.

In a large bowl, mix together the matzo flour or meal, sugar, and vanilla.

Melt the bittersweet chocolate and butter in a medium-ish to large-ish saucepan over low heat, stirring occasionally, until smooth. (Or you can opt to toss them in a glass microwave-safe bowl and nuke them until the chocolate just starts to lose its shape, checking every 30 seconds or so. As soon as you stir the chocolate, it will melt completely. Stir until smooth.)

Stir the flour mixture into the chocolate mixture. Add the eggs, brandy, walnuts, and chocolate chips or chopped chocolate, if using, and stir just until incorporated.

Scrape the batter into the prepared baking pan and bake until a toothpick inserted in the center comes out dry, about 45 minutes. You should probably start checking the brownies for doneness at 30 minutes.

Let the pan of chocolatey goodness rest at room temperature for a few minutes or, if you prefer a moister brownie that’s slightly less crumbly, if you can stand the wait, let them linger on the counter overnight before cutting into squares. This will definitely be my go-to Passover brownies recipe. If you're not familiar with Passover baked goods, you may be surprised at the unusual taste of these Passover brownies, which are made with matzo flour instead of regular flour. Most Passover cakes, brownies, cookies, etc. have a different taste and texture due to the matzo flour. If you're familiar with Passover baking, you'll quickly recognize these as the best Passover brownies ever. They're wonderful, chewy, chocolatey, and easily the best Passover brownies I've had.

It's an easy one-bowl recipe, no mixer needed, and absolutely delicious. If you're making matzo flour from whole matzos, do it in a blender rather than a food processor. A food processor doesn't seem to get the matzo ground fine enough. After trying it in my food processor, I gave up and processed the large crumbs in my spice grinder, and it came out perfectly as very fine flour. I didn't have any brandy so I substituted Passover chocolate liqueur, which gave the brownies an amazing taste. I used all semisweet chocolate since that was what I had in my pantry and it was too stormy outside to warrant a trip to the store.

I used an 8-inch round pan—again, it was what I had on hand. One thing to watch out for—after 25 minutes, I tested the brownies with a toothpick, which came out sticky, so back in the oven for another 4 minutes they went. I tested them again in a few minutes with the same results. After 40 minutes in the oven, I tried poking them in a few different places and discovered that the places where the tester came out sticky was where I had stuck it into the chopped chocolate. In spite of this, the brownies didn't seem overdone. Another thing—when I cut the brownies, the top crust sort of crumbled, but for some reason this isn't unusual with Passover brownies.

I’m not at all certain whether all the ingredients I used for this Passover brownies recipe would pass muster for keeping kosher for the holiday. I used the full 1/2 cup walnuts, because I am far from a person who hates nuts in brownies. (I actually don’t think brownies are worth eating if they don’t have nuts!) I used approximately 1/3 cup mini semisweet chips. Because I wanted to serve these to someone who is alcohol-free, I used apple juice in place of the brandy.

I baked the brownies in an 8-inch Pyrex pan and didn't adjust the temperature downward to compensate for the glass dish as is sometimes recommended. I melted the chocolate with the butter on the stove, as I’m not a big fan of microwaves. I baked these for a full 50 minutes. I let them cool for 15 minutes before cutting. They were nicely moist, not at all cakey, a little bit grainy, but with great taste. They were substantially fudgier than cake. One of my tasters commented that if I had served these with ice cream, and not mentioned the matzo meal replacement for flour, she would not have noticed anything different about them. They were definitely rich and chocolaty, but not so much so as to be cloying or overwhelming.

The serving range of 8 to 12 is accurate, though I confess that 8 is more accurate than 12. I had an extra brownie later in the evening, to see what would happen to the texture as it cooled, and it did become a little less crumbly but without losing any of the fudgy rich deliciousness.

Although I don’t always have matzo meal on hand, if I did, and I was to have a need for brownies, this recipe could be used on a year-round basis, they were that good. As for the ingredients, I happened to have Swedish vanilla sugar on hand, the perfect ingredient for this half-Swedish, half-Jewish baker to use in Passover brownies, so I used 1 tablespoon in place of the 1 teaspoon vanilla extract. There was very little cleanup.

My sister Rivky has taken my holiday favorite and created something even more decadent with it. This cheesecake brownie is so amazing, you will want to make it all year round! Ingredients for Brownie Batter: 1/2 cup of vegetable oil 4 eggs 1 1/2 cups of sugar 1/2 cup of potato starch 1/2 cup of cocoa (use Hershey’s cocoa for the best taste!) Ingredients for Cheesecake Batter: 3 8oz. containers of whipped cream cheese 1 cup of sugar 4 eggs 1 8oz. container of sour cream 1 tsp. vanilla extract Directions: Prepare the brownie batter and pour into a 9×13 pan. Then combine the cheesecake ingredients in a mixing bowl and layer on top of the brownie batter. Bake uncovered on 350′ for about an hour. When you remove the pan from the oven the cheesecake will not be completely firm but will harden outside the oven. (These are also great served as cupcakes. If making cupcakes, fill halfway with brownie batter then top with cheesecake batter. The earliest known recipe for sponge cake (or biscuit bread) from Gervase Markham's The English Huswife (1615) is prepared by mixing flour and sugar into eggs, then seasoning with anise and coriander seeds. [5] 19th century descriptions of avral vary from place to place but it sometimes described as "sponge biscuits" or a "crisp sponge" with a light dusting of sugar ". [6] Traditional American sponge recipes diverged from earlier methods of preparation, adding ingredients like vinegar, baking powder, hot water or milk. [7] The basic recipe is also used for madeleines, ladyfingers, and trifles, as well as some versions of strawberry shortcake. [8]

Although sponge cake is usually made without butter, its flavor is often enhanced with buttercream, pastry cream or other types of fillings and frostings. [9] Sponge soaks up flavors from fresh fruits, fillings and custard sauces. [7] Sponge cake covered in boiled icing was very popular in American cuisine during the 1920s and 1930s. The delicate texture of sponge and angel food cakes, and the difficulty of their preparation, meant these cakes were more expensive than daily staple pies. The basic whisked sponge cake does not contain any fat. It is made by whisking egg whites and caster sugar and gently folding in flour. [8] The process of whisking egg whites incorporates air bubbles to create a foam by agitating the protein albumen to create a partially coagulated membrane, making the egg whites stiffer and increasing their volume. [11] This type of cake, also called foam cake, depends on aeration of eggs and heat to rise. [9] Some types of sponge are baked in ungreased pans to improve the cake's rise by allowing the batter to adhere and climb the sides of the pan. [7] To maintain the moisture of the cake it is sometimes made with potato flour. [12]

Variations on the basic sponge sometimes add butter or egg yolks to make the cake more moist. For Genoise cake flour and melted butter are added to the egg mixture for a moister cake. [8] The "biscuit" sponge from early American cuisine is made by beating egg yolks with sugar, then alternately folding in whisked egg whites and flour. Anne Willan says both types of sponge cake are represented in French cuisine. According to Willan "sponge may have some butter added, but not much or it will not rise". [7] Cream of tartar or baking soda are recommended by some turn of the century cookbooks to make Swiss rolls more pliable and easier to roll. [13]

For some cakes, like the Victoria Sponge, fat and sugar are creamed before eggs and flour are incorporated into the batter, similar to pound cake. [8] [14] In British English layer cakes like the Victoria Sponge are called "sandwich sponge". [6] This type of buttery cake was not possible without baking powder, which was discovered by English food manufacturer Alfred Bird in 1843, allowing the sponge to rise higher. [15] [16]

In the Philippines, sponge cakes and chiffon cakes were introduced during the Spanish period. They are known collectively as mamón. They are typically baked as cupcakes (torta), as loaves (taisan), or as cake rolls (pianono). Traditionally they are simply served with just butter (or margarine) and white sugar. Variants of mamón also use unique ingredients, the most common being purple yam and pandan leaves which result in the ube cake and the buko pandan cake. [17] [18] [19] Crispy cookie-like versions are known as mamón tostado and broas. [20] [21] [22]

Steamed sponge cake like the ma lai gao are commonly found in Malaysia. Chinese almond sponge is steamed and topped with boiled icing, chocolate, vegetables or fresh fruit. Korean sponge called saeng is usually made with rice flour and topped with whipped topping and fruit. Some Vietnamese varieties may have fresh herbs like mint, lemon grass or basil added to the batter, and be topped with caramelized tropical fruit. Milk and jaggery are added to sponge cake in India which is served with the creamy Sri Lankan specialty "avocado crazy". [3] Western style sponge cakes topped with whipped cream and strawberries are popular in Japan where sponge is also used as a base for cheesecakes. [5]
